Nato in una città sulle rive del Lago di Costanza, Heinz cresce in Baviera,affascinato dall’estrema bellezza dei luoghi della sua infanzia. Il suo animo ne viene plasmato al punto di far nascere in lui il gusto per l’armonia che tradurrà in forme, profumi e sapori nei suoi piatti, lui che da giovane sognava di diventare pittore. Attenzione ai dettagli ed una raffinata sensibilità lo rendono uno chef capace di combinare il rigore della ricetta con la creatività dell’arte. Una profonda passione per la ricerca e per il benessere derivante da una corretta alimentazione lo porta a collaborare, tra gli altri, con grandi istituzioni italiane quali il Policlinico Gemelli di Roma ed il Dipartimento di Biologia dell’Università di Firenze, perché se ciò che si mangia dev’essere buono ed emozionante,prima ancora dovrà essere equilibrato e salutare

Born in a little town on Lake Constance, Heinz grows up in Bavaria, fascinatedby the extreme beauty of the places of his childhood. His very soul is formedby them to the point that a taste for harmony and balance is born within himwhich translates into form, fragrance and flavour in his dishes, indeed as ayoungster he dreamed of becoming a painter.Painstaking attention to detail and an extremely elegant sensitivity make hima chef who is able to combine the rigour of the recipe with the creativity of art. A deep passion for research and for the well-being which comes froma healthy diet leads him to co-operate with great Italian universities such as the Policlinico Gemelli di Roma and the University of Florence’s Department of Biology, because if what we eat is to be both good and exciting, first of all it has to be balanced and healthy.
